Double Stuf Oreo Rice Crispy Treats

Often, my weekend baking choices are based on ingredients I have leftover from previous recipes, or items I have tons of in the pantry. The Brownie Goody Bars we made recently left us with a pretty good amount of rice crispies sitting in the pantry with no immediate use for them. What better to do with rice crispies than make recipe crispy treats? Over the years we have made all kinds of rice crispy treats; peanut butter, mexican vanilla, s'mores, and most likely a few more concoctions I'm forgetting. This time I wanted to try something new. These rice crispy treats are packed with Double Stuf Oreos and drizzled with chocolate. They are sturdy enough to be packed in a lunch box for school and make the perfect after school treat… for kids and adults alike. 

Double Stuf Oreo Rice Crispy Treats


  • 1 package Double Stuf Oreos, chopped
  • 4 Tablespoons unsalted butter
  • 10 ounces mini marshmallows
  • 6 cups rice crispies
  • 8 ounces semisweet chocolate


Line a 9 x 13 baking dish with parchment paper. 

In a food processor, pulse oreos until chopped. Try to get a mixture of finely crushed bits and some medium-large chunks. If you don't have a food processor, a large zip storage bag and a rolling pin and a meat mallet should do the trick.

Melt butter and marshmallows in a large saucepan. Once entirely melted, remove from the heat. Add rice crispies and fold gently to combine. Add half of the chopped oreos and fold to combine. 

Spread into the prepared baking dish and use your fingers to evenly press down. Top with about half of the remaining oreos.

While the rice crispy treats are cooling and setting, melt your chocolate in the top of a double boiler and stir often until smooth. Drizzle melted chocolate on top of rice crispy treats and then sprinkle remaining oreo pieces. You can use your fingers to gently press oreo pieces down into the chocolate. After it has completely cooled and chocolate is set, cut into squares.
